There is one thing that Perla and Alessandro -the owners of Pastificio A Mano- really master. And that’s the art of homemade pasta and in general the art of dough!




Located a few kilometres away from Bolzano and a few steps away from Osteria Acquarol, the Michelin-star restaurant run by the same owners, Pastificio A Mano is a ‘down to earth’ bottega for those who really know to appreciate fresh pasta all year round and an incredible panettone around the Christmas season!


Almost hidden in one of Appiano’s little cobblestone alleys, Pastificio A Mano was born during the pandemic, in an effort to still give foodies the chance to enjoy some of Alessandro’s delicious pasta creations. Since then, this little delicatessen has come a long way, and it has definitely won a place in the hearts of local – and not so local- clients.




If you pop in on a weekday morning, you will most probably find Perla and Alessandro preparing their precious pasta creations themselves with a lot of passion and care.




Don’t hesitate to ask them about their favourite pasta recommendations. And, of course be prepared for some serious decision making dilemma. In other words, you will find so many interesting flavour combinations that you will have a hard time deciding which pasta to bring home with you! That’s why I always end up leaving that place with at least a few bags of pasta!


And all ingredients are seasonal! From the original South Tyrolean ‘schlutzkrapfen’ with ricotta, local herbs and spinach to rucola and stracchino cheese tortelli or caramelle with ricotta di bufala and Sicilian pistachios there is always an intriguing combination that will seduce your taste buds.


Pastificio A Mano is by far a must-go place for all gourmands visiting South Tyrol!
