According to Claudio Melis, the restaurant’s owner and chef, ‘In Viaggio begins from the earth, from gestures, from fatigue, from dedication, from imagination, from memories, from looks, from respect’. I totally get it…all these are reflected in his nine steps menu.

Recently relocated in Merano, In Viaggio is a down to earth Michelin star restaurant surrounded by an incredibly green garden; a concept that perfectly fits with the menu, which honours earth’s ingredients in the most respectful and creative way.

It’s not about using the usual Michelin star restaurant ingredients – see caviar, oysters, scallops, lobster, truffle, foie gras etc. It’s not about showing off or trying to include as many ingredients in one dish. It’s not about being snobbish.

It’s about making you feel at ease. It’s about telling stories through food. It’s about crafting complex dishes with nature’s most humble and simple yet delicious elements. It’s about being fresh, seasonal and local. It’s about elevating simplicity. It’s about high-quality ingredients and unforgettable flavour combinations. 

White asparagus, black lemon, oyster mushrooms, chicory or eucalyptus are just some of the main protagonists of Claudio Melis dishes! Dishes that really took me on a flavour trip around Italy and beyond! Till our next culinary trip…
